Ultimate Tuna Sandwich
2 Cans-Oregon Albacore Tuna (Bell Buoy)
½ Bermuda Onion (Diced)
2 Ribs Celery (Diced)
4 Scallions (Diced)
¼ Cup Homemade Pickles (Diced) or try Wickles Brand
2 tb Pickle juice
½ Lemon (juiced)
1 tb Dijon Mustard
½ Cup Mayonnaise (Good quality)
Fresh Ground Pepper to taste
Kosher Salt to taste
Garnish: Frisee Lettuce, and Vine Ripened Tomatoes thinly sliced
Bread (Good quality)
Break up Tuna gently. Add onions, celery, scallions, pickles, pickle juice, lemon juice, Dijon mustard, Mayonnaise, salt and pepper. Gently fold all ingredients together. Blot tomatoes on a paper towel, season with salt and pepper.
Place one slice of bread on the plate, top with tuna mixture. Next place the sliced, seasoned tomatoes, then the Frisee lettuce and finally top with one slice bread with Mayonnaise on it. Then slice sandwich in half diagonally and serve with a side of pickles.
